Have more tomatoes than you know what to do with this summer? Put them to use in this easy tomato and onion salad! A staple in my house, this is one dish that I make on repeat every year, along with our margherita pasta or grilled chicken with balsamic.

Full of flavor, it’s great for feeding a crowd and perfect for quick weeknight meals, cookouts, and summer parties, along with our cucumber onion salad.. Plus, with just 9 ingredients and no cooking required, it couldn’t be easier to prepare! And it’s best served at room temperature. So, you can whip it up, and move on to preparing the rest of your meal. 

In just 15 minutes, the flavors will meld together for the most delicious sweet and bold taste. Consider yourself warned that you’ll be making it for days on end. It really is that tasty!

  • Tomatoes: Fresh, ripe tomatoes form the base of the salad.

Ingredients

  • 1 1/2 lbs. ripe tomatoes, cut into wedges, preferably at room temperature
  • 1 small red onion, thinly sliced
  • 2 Tbsp. fresh Italian parsley, chopped
  • 3 Tbsp. extra-virgin olive oil
  • 1 Tbsp. red wine vinegar
  • 1 tsp. kosher salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. granulated or cane sugar
  • 1/2 tsp. dried oregano

Instructions

  1. In a large bowl or serving platter, arrange the sliced tomatoes, onions, and parsley.
  2. Whisk together the oil, vinegar, salt, pepper, sugar, and oregano. Pour the dressing over the tomatoes. Toss gently to combine, ensuring all the tomatoes are coated with the dressing.
  3. Let the salad sit at room temperature for about 15 minutes to allow the flavors to meld. Serve the salad at room temperature.
