- 2 cups diced cooked chicken, rotisserie or leftover
- 14–15 oz. store-bought prepared flatbread or naan bread
- 2 cups shredded Gouda cheese
- 1 small red onion, halved and thinly sliced

Instructions

- Mix BBQ sauce with garlic.
- Add 1/4 cup BBQ sauce to the diced chicken and toss to combine.
- Place the flatbread on a baking sheet and brush with the remaining BBQ sauce. Add cheese, onions, chicken, and corn.
- Bake for 10-12 minutes, or until the cheese is melted, and the edges of the flatbread are golden crisp.
- Remove the flatbread from the oven and drizzle with a little extra BBQ sauce if desired.
- Sprinkle with chopped cilantro and red pepper flakes, if desired.
- Slice the flatbread and serve immediately.
Notes
- Gouda: Make sure to use the semi-soft mild Gouda and not the hard, aged Gouda.
- Corn: For best flavor, use sweet summer corn. Simply cut the kernels off the cob and add them to the flatbread.
