Seriously Easy Chicken BBQ Flatbread

This barbecue chicken flatbread recipe is a lifesaver during summer days! I’ve been making it for years, and it never gets old. Plus, it’s a great way to use up leftovers from BBQ chicken legs and any fresh veggies you have on hand. 

My kids love to mix and match their own toppings for a fun meal that gets everyone involved in the kitchen! Just layer the ingredients, bake, and serve. 

You can have dinner on the table in less than 15 minutes, and cleanup is a breeze, too. Serve the flatbread on its own (like we do!). Or, enjoy it as an appetizer alongside pasta with spinach and tomatoes. Either way, you can’t go wrong! 

BBQ Chicken Flatbread Ingredients

  • BBQ sauce: I use my homemade 3-ingredient barbecue sauce, but any kind will work. 
  • Garlic cloves: Use fresh garlic cloves, and mince or press them finely. 
  • Diced cooked chicken: Use leftover cooked chicken like grilled chicken tenders or simple roasted chicken. You can also use shredded rotisserie chicken or drained canned chicken if preferred. 
  • Flatbread: We like to use store-bought prepared flatbread, but naan bread works well, too. 
  • Cheese: We love the sharp flavor of shredded Gouda cheese. 
  • Red onion: This adds crunch and a subtle, tangy taste.
  • Sweet corn: For the best flavor, use fresh corn kernels from summer corn. 
  • Fresh cilantro: This adds a bright, refreshing flavor. 

Cheese for BBQ Chicken Flatbread

Of course, you can use any cheese you like best for this barbecue chicken flatbread recipe. However, Gouda is by far the best option in our opinion!

A semi-soft cheese, shredded Gouda adds a creamy consistency and a rich, nutty, slightly caramel-like taste. The unique flavor pairs wonderfully with the sweet, tanginess of the barbecue sauce, creating a cohesive dish.

Just make sure to use the mild semi-soft Gouda and not the aged, hard Gouda.

Flatbread BBQ Chicken Variations

  • Swap the chicken with any other protein such as ground turkey or prosciutto
  • Replace the Gouda with Manchego, mozzarella, cheddar, goat cheese, or any cheese you like best.
  • Add extra veggies like chopped bell pepper, diced jalapeños, mushrooms, or cherry tomatoes
  • Sprinkle diced pineapple on top for a sweet and savory taste. 

How to Make Barbecue Chicken Flatbread 

If not using pre-made chicken, you’ll want to cook the chicken before you begin. Then, let the chicken rest before dicing. Check out the recipe card below for detailed instructions.

Step 1: Mix the BBQ sauce with the garlic.

Step 3: Brush flatbread with remaining BBQ sauce.

Step 4: Top flatbread with chicken, corn, onions, and cheese. Bake at 400F until bubbly and crisp. Add chopped cilantro before serving.

Tips for Reheating

For the best results, reheat leftovers in the oven or air fryer at 350 degrees. This will crisp the bread back up and prevent it from becoming soggy! 

If you’re short on time, the microwave will also work. The flatbread just won’t be quite as crisp.

Description

This easy BBQ chicken flatbread is loaded with flavor, ready in minutes, and tastes better than any restaurant version! 


Ingredients

  • 1 cup BBQ sauce, plus extra for serving, optional
  • 4 garlic cloves, minced or pressed
  • 2 cups diced cooked chicken, rotisserie or leftover
  • 1415 oz. store-bought prepared flatbread or naan bread
  • 2 cups shredded Gouda cheese
  • 1 small red onion, halved and thinly sliced
  • 1/2 cup fresh sweet corn
  • 1/2 cup chopped fresh cilantro
  • Red pepper flakes, optional

Instructions

  1. Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper and set aside.
  2. Mix BBQ sauce with garlic.
  3. Add 1/4 cup BBQ sauce to the diced chicken and toss to combine.
  4. Place the flatbread on a baking sheet and brush with the remaining BBQ sauce. Add cheese, onions, chicken, and corn.
  5. Bake for 10-12 minutes, or until the cheese is melted, and the edges of the flatbread are golden crisp.
  6. Remove the flatbread from the oven and drizzle with a little extra BBQ sauce if desired.
  7. Sprinkle with chopped cilantro and red pepper flakes, if desired. 
  8. Slice the flatbread and serve immediately.

Notes

  • Gouda: Make sure to use the semi-soft mild Gouda and not the hard, aged Gouda.
  • Corn: For best flavor, use sweet summer corn. Simply cut the kernels off the cob and add them to the flatbread.
